Refreshing Salad of Corn and Cucumber

In the season when the temperature rises, the human body also builds up excess heat. Corn and cucumber, which are in season now, have the effect of removing the extra heat. They also have a diuretic effect, which rid your body of excess water. Therefore, they might help to reduce swelling. Tomatoes have the same effect, so eating them together is even better!

  • 1 corn (boiled)
  • 1 cucumber
  • 6 small tomatoes
  • 300cc dashi soup
  • - 1 tbsp vinegar
  • - 2 tbsp soy sauce
  • - 2 tbsp sugar

Directions

  1. Prepare dashi soup.
  2. Pour 300cc of dashi into an empty bowl and add vinegar, soy sauce, and sugar one by one.
  3. Cover the bowl with plastic wrap and make it cool in the refrigerator.
  4. Shave corn kernels off the cob with a knife.
  5. Peel small tomatoes by “yumuki” measure. (Hull the tomatoes, make a cut cross on the opposite side of the stems, and put them in boiling water for 10 seconds. Then, take them out into cold water and peel.)
  6. Cut cucumber in bite-sized quarter-round shape.
  7. Put corn, tomatoes, and cucumber in the bowl prepared in step 3.
  8. Make them cool for 2 hours.
  9. Serve it on the dish.
