Keiran

“Keiran” is a soup of anko bean paste wrapped in egg-shaped mochi suspended in a broth flavored with soy sauce. The sweetness of the dumplings and the flavor of the broth create a nice balance that is not too sweet and that is easy to eat.
The name “keiran” originates from the resemblance of the dumplings to chicken eggs, also called “keiran.” It is mainly found in the Nanbu area of the Shimokita region in Aomori. It is an essential dish in celebratory events.
For celebrations, the mochi are colored red and white. In the event of a funeral, the dumplings are made in smaller sizes or colored in blue or green.
