Naratake (honey mushrooms) have many regional names such as orikimi, borimeki, and kakkui. In Aomori, it is known as “samodashi.”
Naratake used to be an important food source for the winter as it could be preserved, uncooked in salt.
Having an excellent texture and amazing flavor, naratake is best eaten cooked in miso soup or hot pots.
