Mozuku is a type of edible seaweed. In Aomori, mozuku typically refers to ishi-mozuku (Sphaerotrichia divaricata) belonging to the family Chordariaceae. Unlike farmed okinawa-mozuku, another type of mozuku, ishi-mozuku in Aomori are all natural, with great viscosity and a unique crunchiness.
Within the same ishi-mozuku family, the local names change depending on their habitat and the firmness and viscosity vary.
The unique viscous texture of mozuku is believed to have beneficial substances including antioxidants, anticarcinogens, antibiotics, gastric protective agents, and blood cholesterol level reducers.
High in vitamins such as vitamin A and fiber, it is valued as a healthy low-calorie ingredient. It is commonly eaten as vinegared dish, tempura, in miso soup, and in ramen.
